Once in a while life is occupied, busier even than I foresee on my busiest day. Fortunately, I have these 10 minute, more advantageous Spinach and Tomato Tuna Salad Sandwiches close by for lunch or supper.
Y'all, moving following 10 years is no darn joke. It's so difficult choosing which room, what stuff to handle first.
And afterward there's the genuine round of Tetris you need to play to stack the majority of the containers and boxes in the region regardless you're living in with the goal that you can A.) move around to some degree unreservedly and B.) they don't tumble down on you in a torrential slide of glittery passing on account of specialty receptacles.

- 1 7 oz can solid white albacore tuna, drained & flaked
- 1 cup fresh baby spinach, washed and roughly chopped
- 1/3 cup plain Greek yogurt
- 1/4 cup shredded mozzarella cheese
- 1-2 Roma tomatoes, seeded and diced
- 1 tsp fresh lemon juice
- salt & pepper, to taste
Instructions :
- In a small bowl, whisk together the yogurt and lemon juice until smooth.
- To a large mixing bowl, add the tuna, spinach, cheese, & tomatoes. Gently stir, just until evenly mixed.
- Add the yogurt mixture, again stirring until evenly combined. Season the mixture with salt & pepper, to taste.
- Serve on freshly sliced ciabatta buns, or if looking for a lower carb option- with lettuce as a wrap, or even enjoy it on top of crackers.
