A most loved lunch in our home is chicken serving of mixed greens. It is something that can be made so effectively either with extra chicken, rotisserie or even canned chicken. It use to be that we adhered to the work of art, antiquated method for making chicken plate of mixed greens.

Chicken, mayo and celery. Forever and a day prior I saw waldorf style chicken plate of mixed greens on a menu and contemplating internally "that is so insane! Who puts such stuff in chicken serving of mixed greens?". It wasn't until I extended my palette grew up that I understood there was a purpose behind those blend ins.

Flavor! Sweet tart, appetizing, crunchy and that's only the tip of the iceberg. The diverse fixings contacted each piece of taste buds making a stunning flavor mix. Starting there on I began exploring different avenues regarding diverse flavor profiles for our chicken serving of mixed greens.

Ingredients :
  • 1 rotisserie chicken shredded and chopped
  • 5 slices cooked bacon chopped
  • 10 cherry tomatoes quartered
  • 1 avocado diced
  • ⅔ cup mayonnaise
  • ¼ tsp each garlic & onion powder
  • Salt & pepper to taste
  • Lettuce for wrapping
  • Celery seasoning to taste optional

Instructions :
  1. In a large bowl, combine all dressing ingredients. Mix well.
  2. Add chicken, tomatoes, bacon and avocado. Stir to combine.
  3. Wrap in lettuce, enjoy!
  4. Note *Also tastes amazing in Greek gyro pita bread or on sweet hawaiian rolls.
